Asian Style Zoodles


Happy hump day!

If you have read along on my food posts then you probably know I have a hard time with making lunch. It is annoying trying to figure out what to cook. Well, zoodles have been my answer for that! It is such an easy and delicious but also light dish, absolutely perfect for lunch!

Mom gave me her spiralizer because she didn’t like it for some reason (it worked great for me!). And since zoodles have been all the rage lately I had to give it a shot!

And I must admit… they were pretty great! I made them for my boyfriend and he gave me his stamp of approval.

I start off with the aromatics, shallot- which is just a lighter flavored onion, and garlic. The finishing touch is a squeeze of lemon juice which is the absolute secret of this dish, it gives such a fresh and bright ending note.

  1. 1 tsp olive oil
  2. 1 tbsp shallot
  3. 1 garlic clove
  4. 1 tbsp teriyaki sauce
  5. 1/2 tbsp so sauce
  6. 1-2 zucchini
  7. 1/2 cup mushrooms (or to taste)
  8. lemon
  1. Heat oil over medium heat
  2. add shallots and garlic and saute
  3. add mushrooms and cook
  4. add zucchini
  5. cook till zucchini wilt
  6. add teriyaki and soy sauce
  7. cook for 3-5 mins depending on how crunchy you like your zoodles
  8. add a squeeze of lemon
