Busy week meal fixes

Happy Monday Friends!

I am so excited about today’s post. I have heard of meal delivery services that have all of the ingredients shipped to you and you just cook. Being the foodie that I am, I absolutely LOVE THIS! It is so perfect when you have a really busy week and still want to cook healthy at home. I  have been wanting to try it forever. It is so nice having everything and not having to make another grocery store trip because you forgot something… we all have had that happen at some point. So I partnered with Sun basket and I am sharing three delicious meals with y’all!

So let me start off by telling you a little about Sun basket. They are organic, non-GMO and have options for all dietary restrictions such as vegetarian, gluten free, dairy free, paleo and so much more! So it really does fit all lifestyles and tastes. Each week they have a menu with numerous options to choose from. It is about the same price as going out to eat.. but so much healthier for you! I really liked that I could make it that night for dinner and have leftovers for lunch the next day. It makes eating healthy at my apartment while in college so much easier!

 

 

The first, and probably my favorite meal  was this ginger-sesame chicken! This is something completely out of my comfort zone, which is why I got it. My mom doesn’t like ginger, so I don’t really remember eating it much growing up. After this delicious chicken, I am now a huge ginger fan! I have never heard of this rice before tbh, but it paired so well with the ginger chicken. The little bit of crunch added by the sugar snap peas was the perfect texture complement to this dish. There was a spicy component, but you added as much as you wanted which was perfect. I wish I would’ve added more because the spicy flavor was so yummy! I really want to recreate this – it was that good!

 

 

The second meal was steak fajita lettuce wraps, which were as delicious as they sound! Being in the habit of eating chicken everyday is an actual life struggle right now. So I am really glad to get steak… seriously burning out on chicken.

I love that they gave a living butter lettuce! I feel like having lettuce like that makes it so much crisper and fresh tasting. They completely thought of everything ya’ll, down to guac! This one took a little bit longer to cook than the first one because of all the veggie chopping. But it was totally worth it, friends! All of the toppings really made it with the different textures and spices.

 

Last, but certainly not least, is the frittata and orange smoothie. This was the perfect Sunday brunch! I have recently come to realize that I really like roasted red peppers, and having that in a frittata with spinach was just too perfect! I never would have thought of attempting to make a frittata at home, but it was really simple and so quick! The arugula pesto was so amazing with the frittata, and really made it a perfect brunch item.

This might sound crazy, but the few times I have attempted to make a smoothie has been an epic failure. I must say this is the best smoothie I have ever made! I really think it was the maple-vanilla blend… Oh my goodness it was delish!

For it being the first time trying a food service, it turned out amazing! I really might start getting this every month; It makes cooking a breeze.
