Happy #FOODFRIDAY  friends! haha I totally just made that up… but I wouldn’t be surprised if it is a thing! I have a fun post today. I am sharing what all I have eaten this past week!

So I have gotten some questions recently about the diet plan I have talked about on my snapchat (s_southerncurls) called the Daniel Plan. Which I have not been doing so hot on lately TBH. I shared a lot during the fast portion of the plan. I’ll do a quick summary, for 10 days you cut out gluten, dairy, sugar, caffeine and alcohol. It was really hard the first couple of days, then you kinda just get in a routine and you know what you can have. Then you slowly add back in each item one week at a time. I added back dairy first.. because I really love cheese. Next I added gluten and everything else because I really wanted sugar and caffeine. I just have sugar and caffeine very rarely.

My whole goal with this lifestyle change (I know, so cliche) was to eat healthier better as a whole but still allow myself to cheat and enjoy my meals. Not everything is strictly on the plan but it is still relatively healthy. 

So lets get started!



This was my dinner last Monday night.

Fish: My absolutely favorite baked fish ever! I use filet of flounder with a layer of mayo (I know it sounds weird but trust me) then I put the best Italian breadcrumbs on top. Mom and I found them at Christmas Made In The South and The Yellow Daisy Festival in Stone Mountain, GA.

Asparagus: I love asparagus, I know it isn’t everybody’s favorite but I LOVE them! Mom made some one time with goat cheese and it was delish! She didn’t answer my call to get the recipe of course, so I kinda just made it up. I brown some shallots and garlic in olive oil then add in the asparagus and chicken stock and let it simmer for a bit till there is no more liquid. Then I grate some Parmesan and goat cheese on top. It was pretty good to be make up.

Sweet Potato: I have a potato bag and you cook it in a microwave.. it bakes in the microwave but tastes like it came out the oven with 1/4 the time.


Something you may not know about me… I LOVE breakfast! Breakfast for breakfast, breakfast for lunch, breakfast for dinner, breakfast for snack… ok you get my point  I think.

I can not, not eat in the mornings. I don’t understand how people don’t eat breakfast before heading to work, class, or just starting the day.

But this is one mornings breakfast. I bought turkey bacon for the first time, and it really wasn’t too bad! I also made an omelette, which surprisingly didn’t turn into scrambled eggs with cheese.


Lunch, the absolute hardest meal for me is by far lunch. I usually don’t go this all out for lunch. But the day before I took out chicken from the freezer for dinner and instead of cooking that I got cheese dip from Barbs. The next day I was going out for dinner so I had to cook it for lunch. I had a bagged Asian salad in the fridge so i just threw that together! This would be great to do with leftover chicken from the night before! And it was pretty quick and easy which is always a plus! 


Then I had a little cooking break, things kept on coming up and I didn’t cook or when I did I completely forgot to take pics… oops! So now on to this week!


I already forgot what I ate on Monday… so we are starting with Tuesday lunch

I have recently fell in love with turkey burgers, they are so easy and absolutely perfect for lunches!

They are even better with caramelized onions (these got a little too caramelized, but its ok!)

For the turkey burgers I just add shallots, breadcrumbs, soy sauce, and a little teriyaki! When I buy turkey meat I separate the meat into 1/4 lb sections in Ziploc bags and put them in the freezer, it makes this SOO easy!


Tuesday Dinner!

I love a good salad with homemade dressing. My mom makes it all the time, I don’t even have store bought salad dressing at my apartment, once you start making them you won’t go back!

Salad: I had just a box of mixed greens with blueberries, goat cheese, walnuts and the salad dressing.

For my chicken I just cooked it in the pan with Dr. Pete’s Burgundy Marinade — my goodness I love this brand! My mom has been buying from them for years, they always have booths at Christmas Made in the South ( and I think the Yellow Daisy Festival in Stone Mountain Ga) They have so many different delicious products! *note: not sponsored, just delish* 😉

I also made Consomme rice, I have been craving this forever and I had all of the ingredients. It isn’t the healthiest thing… especially since I got like 2 or 3 more helping that size. But it was so worth it. 


Again… Breakfast = life

So I made two fried eggs a handful of blueberries and my recent fave, cinnamon raisin English muffins. If you toast it and put a little butter and cream cheese it is the! 


Wednesday was a really busy day for me, I just had a lot going on throughout the day and a meeting at 6:30 so I wanted a quick, easy and delicious dinner. Zoodles were my saving grace… and I impressed myself if I do say so myself. It was so good I am thinking about doing a blog post on this recipe.

It had shallots, garlic, teriyaki, soy, mushrooms, cabbage, and a little lemon!


I love making naan pizzas! They are super quick and yummy.

I put pesto, shallots, mozzarella, goat cheese and Parmesan cheese. I also like putting chicken and roasted peppers on top, I just didn’t have any.


Lastly but not least, last nights dinner turned out really good!

I found this Lemon Chicken recipe on pinterest, I made it in my cast iron skillet (which is the best thing ever!) I also had sweet potato and a quinoa rice blend.
