Happy Monday!

My favorite meal of the day is breakfast, it always has been and always will be! When I was growing up my dad made breakfast every morning before school. Not like cereal, but french toast, omelets, pancakes, and biscuits and gravy. I will admit, I was spoiled (or as I like to call it loved).

But going to college freshman year wasn’t too bad because I ate in the dining hall every morning and that was the only half decent meal they served. Moving into my apartment I still make breakfast (almost)  every morning. Sometimes it is french toast or eggs and bacon and other times it is a banana because I took too long deciding what to wear… 

Depending on how early my class is that morning depends on what (or if) I cook. This semester for some reason, has been harder for me to actually be ready in time to cook myself breakfast.

I am honestly not the biggest fan of oatmeal. But my sweet grandmother made this one weekend we were visiting so of course I tried it! I’ve been hooked since. It is SO good. Even if you don’t like oatmeal I encourage you to just try it! And it has blueberries and apples… need I say more?

 

Fruity Baked Oatmeal

Ingredients
  1. 3 C. Quick Cooking Oats
  2. 1 C Brown Sugar
  3. 2 t baking powder
  4. 1 t salt
  5. 2 beaten eggs
  6. 1 C milk
  7. 1/2 C melted butter
  8. 3/4 C tart apples
  9. 1/3 C peaches
  10. 1/3 C blueberries
Instructions
  1. Combine 1st 5 ingredients
  2. Combine eggs, milk and butter
  3. Add wet to dry mixture
  4. Stir in fruit
  5. Pour in greased 8" baking pan
  6. Bake uncovered at 350 for 35 to 40 mins or until knife near center comes out clean
  7. Serve with milk

I used steel ground oats in the pictures (because that is what I already had in my pantry, but I normally use regular oats and I’d suggest using those!
